Peach Cobbler Cups Recipe

September is for autumn recipes!!! I believe when certain foods grow in specific seasons, the universe (and God) is telling us something! EAT THE FOOD! It’s all about being mindful of our earth, world, others and our food! Because I’m such a fan of seasonal produce and peaches, I have this easy, delicious, healthy recipe for you!!

Peach Cobbler Cups

Servings 12

Ingredients

  • 2 cup Peaches
  • ⅓ – ½ cup Brown Sugar
  • 2 tsp Cinnamon
  • 1 dash Salt
  • 1 cup Whole Wheat flour (or 1 cup gluten free flour)
  • 3/4 cup Milk
  • Butter
  • 2 tsp Baking Powder
  • Pumpkin Spice
  • Optional: Whip cream on top after its baked and cooled!

Directions

  1. Preheat oven to 375 degrees F
  2. Liberally butter muffin pan with hands
  3. Cut peaches into small bite sizes
  4. In a bowl add peaches, 2 tsp brown sugar and cinnamon. Mix with hands.
  5. In a separate bowl mix dry ingredients with milk. And mix with hands.
  6. Put a dollop of batter into each muffin cup.
  7. Top each cup with peaches. (I like lots, so I let it heap over)
  8. Sprinkle each cup with pumpkin spice.
  9. Bake in oven for 20 minutes.
  10. Let cool for 10 minutes and Enjoy!

Alternative recipe – Gluten Free and Dairy Free

Ingredients

  • Peaches: 2 C
  • Coconut Palm Sugar: ⅓  C
  • Cinnamon: 2 tsp
  • Salt: 1 dash
  • Namaste Flour Blend (from Costco): 1 C
  • Almond Milk: ¾ C
  • Coconut oil
  • Baking Powder: 2 tsp
  • Flaxseed: 1 Tbsp
  • Pumpkin Spice
  • Optional: Coconut whip cream on top after its baked and cooled!

Directions

  1. Preheat oven to 375 degrees F.
  2. Liberally oil muffin pan with hands.
  3. In a small bowl put 1 Tbsp ground flaxseed with 1 Tbsp water, stir. Let sit for 10 minutes.
  4. Cut peaches into small bite sizes.

  6. In a separate bowl mix dry ingredients with milk. And mix with hands.
