I’m on a blood sugar support journey presently. It’s been almost 3 weeks since I’ve made small changes to my diet to help my energy levels, brain function through supporting and stabilizing my blood sugar. (And it’s helping!) #FOODISMEDICINE
I’ve been playing around with recipes and have been focusing on adding more protein to each meal, because this is huge for blood sugar balance and health. This week I saw this breakfast recipe on @arrowsandbow and I had to try it! I tweaked it a bit to make it more blood sugar friendly, gluten free and more plant based.
Instructions
Preheat oven to 400 degrees. Grease a round baking dish with butter and then take a little pad of butter and set in the bottom of the dish. Place dish in oven while it’s preheating to let the butter melt.
Blend all ingredients in a blender, then pour batter into preheated dish. Bake for 20-25 minutes. Top with either powdered sugar, cinnamon, frozen berries or all three, OR drizzle with boysenberry or berry syrup (no sugar added).

Ingredients
Serves 4-6. My substitute suggestions are in parenthesis
- 8 oz cream cheese (8 oz vegan cream cheese OR 1/2 avocado + 3 tbsp butter)
- 6 eggs (farm fresh)
- 1 cup flour (1/2 cup almond flour, 1/2 cup gluten free flour)
- 1 cup milk unsweetened (coconut)
- 3 tbsp honey (raw)
- 1/2 tsp baking powder
- 1/2 tsp salt (himalayan)
I fed this to my nieces and nephew and are picky eaters and they came back begging for seconds and thirds. Winning!
